Tomato Stew

Tomato gives very good flavour to everything; that’s why I recommend that you keep one or two tomato cans or small cans of tomato paste –it’s very economical, yields much and gives food good colour and taste-; and if price is low, get fresh tomatoes


½ chopped onion
2 teaspoons oil
2 garlic cloves finely chopped
Canned tomato or tomato paste or 4 fresh tomatoes
Hot pepper (optional)
Salt, pepper, oregano
A little water

Fry the onion in oil at low heat until golden brown. Add the garlic cloves and stir to prevent burning. Add the tomato, salt, pepper, oregano, hot pepper and a little water. Lower the heat and cover with lid. When the paste turns darker, it’s ready!

This stew may be mixed with rice, added to meat when cooking it, zucchini with corn, etc.
Prepare this stew once or twice a week, put in plastic pouches and freeze it in daily portions. so you can use it later.
